Ingredients
- 9 large eggs, divided - 1 (8-oz.) block cream cheese, softened to room temperature, cut into cubes - 1 tsp. maple extract - 1 tsp. pure vanilla extract - 1 1/2 c. almond flour - 2 tsp. baking powder - 1 tsp. kosher salt - Butter, for pan - 4 pieces bacon, cooked - 1 tbsp. heavy cream - Freshly ground black pepper - 4 slices American cheese
Instructions
1. In a medium bowl, whisk together 4 eggs, cream cheese, maple extract, and vanilla.
2. Add almond flour, baking powder, and salt. 3. In a medium nonstick skillet, melt butter. Add about ¼ cup of batter to pan and cook, 3 minutes, then flip and cook another 3 minutes or until golden and cooked through. 4. Repeat with remaining batter. 5. In a small nonstick skillet, melt butter.
6. In a small bowl whisk together remaining 5 eggs and heavy cream.
7. Season with salt and pepper. Pour about ¼ of eggs into skillet. Let cook 1 minute, then fold edges into the center to create a small circle.
8. Repeat with remaining eggs. 9. Place eggs on top of a griddle cake, then cheese and a slice of bacon and top with another griddle cake.
