Ingredients
- 4 eggs - mixed - 1 cup almond flour - 1 cup coconut flour - 2 cups ground pork grinds - Seasonings - salt, pepper, paprika, rosemary, thyme, sage, garlic and onion ground - 6 jalapeños cut into long halves with seeds cut out and carved. - 1.5 cup mozzarella cheese - 1 block cream cheese
Instructions
1. Mix almond flour and coconut flour together. 2. Mix in your pork rinds in with your chosen spices! 3. Mix mozzarella cheese and cream cheese together, it will be thick! 4. Stuff one side of the jalapeño with the cheese mix and dip into egg wash, then into flour mix until evenly coated. Repeat again, and place to the side. 5. Once they’re all stuffed double coated, place in the freezer for 30 minutes 6. After 30 minutes, take out of the freezer and coat in egg wash one more time, then completely cover in your pork rind/spice mix. 7. Deep/Medium fry in your and let cook on both sides for 3ish minutes, drain on paper bowl.
